Everybody, it seems, loves pasta, and anyone who wants to make it at home will want to pick up an excellent pasta cookbook by The Encyclopedia of Pasta: Over 350 Recipes for the Ultimate Comfort Food, by Thomas Nelson. This is a book in a popular series, and is excellent. This cookbook is loaded with unique recipes that most home cooks have never heard of, and dozens or more recipes that are “must try.”

The recipes for all of the types of pasta include step-by-step instructions for forming all different shapes of pasta, and many include photographs. However, there aren’t photos of every recipe which is a bad thing because most readers and especially those of us who love to make pasta, need to know just what our finished dishes should look like.

Another problem with the recipes is that they are just presented, one after another, with no notes or explanation at the beginning. Readers and pasta makers won’t have any idea where the recipe originated from, how the dish is to be served, or the significance of the shape or filling.

A big positive of this cookbook is that there is a huge variety of different recipes for basic pasta: whole wheat, spinach, egg pasta, etc. This gives the cook options. The recipes are also very easy to follow, and for this veteran pasta maker (I’ve taught pasta classes in my community for 20+ years), that is very important. The recipes aren’t just for Italian pasta, rather the recipes include Asian and other types gathered from all over the world.

All told, the variety in this cookbook is awesome. There are enough recipes to keep an ambitious and pasta loving cook busy for a full year. The recipes are easy to follow and luckily most of have internet so we can look up the history or background on the recipes if we are curious.
