Broiled Crab Meltaways Recipe
Always looking for good appetizers, I was given the following recipe for Broiled Crab Meltaways by my friend Diana who had been sorting through her recipes and thought these sounded good. I made homemade English muffins, then mixed the ingredients which I spread on the muffins. I was patient and waited for them to freeze (absolutely essential), and the anticipation of eating them was almost overwhelming. Once I finished them, I was in love, and now make them often. I sometimes make them without cutting them into quarters and serve them as whole sandwiches for lunch.

You don’t have to make English muffins from scratch (I just didn’t have any on hand), and good English muffins from the grocery store make excellent appetizers or sandwiches. Since they must be frozen first, I make a lot and store them in the freezer so I can broil them when the mood hits me. If you like crab, you’ll love these fabulous sandwiches. Incidentally, they take only 10-15 minutes to assemble before freezing.

48 Appetizers

1/2 pound crabmeat, preferably fresh and picked over, or canned
1/2 cup butter
7 ounces Sharp Cheddar Cheese Spread, such as Kraft Old English Sharp Cheddar or Kaukauna Sharp Cheddar
2 tablespoons mayonnaise
1/2 teaspoon Old Bay seasoning, or other favorite seasoning
1/4-1/2 teaspoon garlic salt, (to taste)

6 English muffins, split in half

  1. Mix the crabmeat, butter, cheese spread, mayonnaise, Old Bay or other seasoned salt, and garlic salt until well-mixed.
  2. Divide the mixture between the English muffin halves, sprinkle with paprika, and cut each half into quarters.
  3. Place the pieces on a parchment-lined baking sheet and freeze (they won't turn out if not frozen first) for at least 30 minutes.
  4. When ready to serve, place under a broiler and broil until golden brown and bubbly. Serve hot.
